The Wilder Kitchen is a way of cooking, eating, and connecting with nature. I draw on my experiences in wild places, in other cultures, and the seasons I find myself in to explore the relationship between food, fire, and the outdoors. Every dish is inspired by the Scottish landscape and the incredible local producers and foragers I work with. Supporting small, local businesses and sustainability is at the heart of everything I do.

The experiences I create across Scotland, and increasingly in England and Wales, focus on what we can source locally, celebrating the joy of cooking and eating outdoors while fostering a deep respect for the land and the people who nurture it.

Supper clubs, workshops & collaborations 

Cooking with fire allows you an insight into the dialogue of the wilderness and a glimpse into our primal history. Outside, cooking is reinvigorated, reimagined and returned to its most natural state, where ingredients are married to the burning embers, completing a process that traces back thousands of years.

Experience

William has travelled the world, working in kitchens that have shaped his approach and inspired his creativity. He completed a stage at the award-winning Hiša Franko, a Two Michelin Starred restaurant in Slovenia featured in Chef's Table.

Today, William’s work revolves around creating open-fire dining experiences across Scotland, collaborating with brands such as William Grant & Sons. He connects food, fire, and nature with an ethos of supporting local businesses and suppliers, sourcing the finest organic and sustainable ingredients.
